One delicious vegetable that is in-season for spring is asparagus.
Asparagus can usually be found in the grocery store all year, but it's at peak quality during spring. It is simple and quick to cook, so it makes a great, easy add on to all kinds of meals. Asparagus is a vegetable that can have a lot of variety because it can be cooked many different ways, including baked, roasted, sautéed, steamed, boiled or grilled. Prepping asparagus is super easy. Just snap off the smooth end of the stem where it naturally breaks when bent and rinse edible portion under cool water and pat dry before seasoning.
Asparagus has it's own great flavor. It can be cooked with just a little bit of olive oil and salt and pepper and can also be seasoned with other ingredients to give it different flavors, depending on what you are serving it with. If you need another reason to try asparagus this spring, in addition to its easy preparation and great flavor, it's high in fiber and contains iron, vitamin C and B vitamins.
