One of the very best things about spring is.... strawberry season! Thanks to advances in transportation, strawberries are generally available year-round from Mexico and warmer states like California and Florida. However, the peak time for strawberries in Oklahoma is April - June. Reasons to eat local strawberries while they are in-season include they are more fresh and taste better, they are cheaper and it's more friendly to the environment.
In addition to having the BEST flavor, strawberries are also high in vitamin C and folate. When shopping for strawberries, pick ones that are unblemished, bright red, shiny and firm with fresh, green caps. Strawberries will stay fresh (unwashed) in the fridge for about 1-3 days. You should wash them just before enjoying, as they spoil faster after washing.
There are countless ways to use fresh strawberries this spring. One of my favorite spring/summer desserts is strawberry shortcake, pictured above. It's a fresh, lighter dessert that is absolutely perfect for a warm day. Strawberries are also a perfect addition to breakfast foods like oatmeal, whole grain waffles with nut butter and smoothies.
