My All-time favorite: Brussels Sprouts

Whoa, time flies! We have come to the last page of 2018. I hope this year has been treating you well. For this month, I am so excited to share with you that my favorite food, brussels sprouts, is in the season! I know the current food system makes almost all kinds of food available all year round, but when it is the season of brussels sprouts, they are probably available in most of the grocery store. Also, around this time, brussels sprouts are sold at a reasonable lower price, and are at their peak nutritional value.

 

Brussels sprouts are rich in fiber (of course), vitamin K, and vitamin C. Vitamin K plays important role in blood clotting and bone health. As for vitamin C, it helps promote iron absorption, and is one of the key nutrients responsible for tissue repair (wound healing) and immune function. (Link, 2017)

 

Such an amazing food, what are we still waiting for now? So, next time when you shop for your food, make sure to grab some brussels sprouts at the store.

 

What can we do with these brussels sprouts?

 

I personally like to roast them in the oven coated with some balsamic vinegar and honey/maple syrup. Sometimes I would include potatoes, sweet potatoes, zucchini, walnut, and dried cranberries to the dish.  

 

 

While searching for new recipes for brussels sprouts, I found a yummy brussels sprouts salad recipe - Fall Shredded Brussels Sprouts Salad from Iowa Girl Eats. I modified the recipe based on what I have in my pantry. My version of  salad contains shredded brussels sprouts, shredded red cabbage, shredded carrots, dried cranberries, toasted chopped walnut, and fried shallot. For the dressing, I mixed balsamic vinegar, maple syrup, salt, and pepper.
